Dragon Fruit

Dragon fruit looks beautiful. The flesh of the fruit comes in 2 colors, white and a deep purple. Both are very similar in taste and surprisingly bland. 

This salad livens it up with ginger root, lychee fruit, and honeydew melon. Try a pinch of cayenne pepper or red Thai curry powder for emboldened warmth.

Ingredients:

1 cup dragon fruit, diced
1/2 cup lychee fruit; skinned, pitted, and sliced into smaller pieces.
1 cup honeydew melon, diced
1-2 tablespoons fresh key lime juice
2 teaspoons honey or palm sugar
1/2 teaspoon fresh mashed ginger
Thai basil leaves to taste
1/8 cup dry roasted peanuts, crushed

Preparations:

The Dressing - Whisk together ginger root, lime juice, and honey. (Or palm sugar if available.)

Toss diced fruit together with Thai basil leaves and dressing.

If you want to have fun, serve in hollowed out dragonfruit or if not, a shallow dish.
Garnish with crushed peanuts and serve immediately.
