"Sai Oua" Northern Thai Sausage ไส้อั่ว​​​​​​​

This is a classic dish of Northern Thailand, "sai oua". It is one of the most flavourful sausages, in my opinion. The pork is mixed with an aromatic spices and herbs, curry paste, then grilled over charcoal. You eat it with your hands with sticky rice and fresh veggies, or perhaps a Green Pepper Paste like Nam Prik Nuum.

Making the sausages doesn't have to be a lot of work, though. Here is a Lobo Spice pack for Sai Oua. Included are all the spices and herbs you need as well as the sausage casings. Mix the spices in some warm water, knead in some ground pork and then fill the casings and Grill.

Once you make the mixture, if you don't want to go through the process of stuffing the sausage casings, you can make patties, sausage balls, or make "caseless sausages".

This is what to do if making it from scratch:

For the Chile Paste 

Ingredients

  • 6-8 g dried chilies
  • 3 slices galangal, chopped
  • 1 stalk lemongrass, bottom half only, thinly sliced
  • 2 inches turmeric root or 1 ½ tsp turmeric powder
  • ⅓ cup chopped shallots
  • 4 cloves garlic
  • A boost from half a kaffir lime
  • 1 tsp fermented shrimp paste
  • 1 Tbsp fish sauce

Grind the dried chilies. Using a coffee grinder is easiest, but wash it well before using it for coffee.

In a mortar and pestle, grind lemongrass, galangal, turmeric and kaffir lime boost until fine, then add the dried chilies in once the mixture starts to feel wet. Now add garlic and shallots and pound until fine. Add shrimp paste and pound to mix. Stir fish sauce in at the end. 

Now the rest:

Ingredients

  • 1 lb ground pork. You do not want lean, you want it to be fatty.
  • 5 kaffir lime leaves, remove center stems, thinly julienned and minced
  • 5-6 stems cilantro, finely chopped
  • 1 small green onion, finely chopped

Using your hands knead together the pork and the curry paste until thoroughly mixed. Then add cilantro, green onion and kaffir lime leaves and knead it in just until combined.

Stuff your casings and the sausage is ready for the grill.
